So we’ve heard that song all of our lives, have you ever HAD figgy pudding? Me either, heck I thought it was PUDDING! It’s not. but y’know what, it ain’t bad!!!
Here’s how I made it.
2 9oz packages of dried figs, 1 3/4 cups of milk, 1 1/2 cups of flour, 1 cup sugar, 2 1/2 teaspoons baking powder, 1 teaspoon each of cinnamon, nutmeg and salt. Also zest and orange. 3 eggs, 1 1/2 cups breadcrumbs and of course BUTTER 1/2 cup melted.
SO you chop up the figs and put them in a pan with the mile and let that simmer (NOT BOIL!!) for a bout 15 minutes. While that is happening…
Turn your oven on to 350.
in a bowl put the flour mix sugar, baking powder, nutmeg, cinnamon, and salt and stir it up a little.
In a mixer beat those 3 eggs for about a minute on high, then slow the mixer down and add the butter, bread crumbs, orange zest and finally the milk/fig mix that’s been simmering. Mix that all up and then slowly start adding in the bowl of flour and other ingredients, mix well.
Take some butter or crisco and grease up a bundt pan and pour all that mix into the pan, yes it is supposed to be that thick! Even it out as best you can.
NOW find a big dish that the bundt pan will fit in (I used one of those aluminum turl
